Dear Louise, this is not a special receipe from Oman but from the arab Gulf
coast, and it is changed for western taste. Anyway, it works.
First, you have to made Baharat, a blend of spices
Baharat : half a cup black pepper, quarter of a cup Koriander (sorry, I do not
know the name in English),a quarter cup cinnamon, a quarter cup cloves, one
third of a cup kumin, two teespoon Kardamon (soory again), 4 nutmegs, half a cup
of redpepper-powder. The spiciness of the Baharat depence on this redpepper. Put
it alltogther in a stout mixer and powder it.
Then try
Machbuos ala Dajaj for 4-5 persones
Take a big high pot, put two spoon Ghee (fat of butter) ore butter and two big
onions in pieces in, let it get little bit brown.
Put one spoon Baharat and one teespoon Kurkuma in and steam it two mor minutes.
Add one chicken in small pieces and roast it a lit bit.
Then add two and a half cup of water, one and a half cup of skinless tomatoes, 2
paece of cinnamon, three cloves, 6 peace of Kardamon, two teespoon parsley and
1/2 Limette (you know this green kind of citroen) and about three teespones of
salt. Cook it 45 min.
Take two cup of Basmati rice(please do not use other kinds of rice) and give it
in the pot.closed the pot very well and cokk everthing on low fire about 30 min
until the chicken is fine. Take the limette and the cinnamon and the Kardamon (if
you find it)out.
Serve everthing an plate and place the chicken peaces on the top of the rice.
